    Relevant experience and laboratory resources
    The Quality & Safety department of the Nestlé Research Center is internationally recognized for research contributions on food safety. With over 130 scientists and technicians, the QS dept. has strengths in analytical chemistry of foodstuffs, toxicology and risk assessment studies. Specifically, the Contaminants group of the QS dept. has expertise in the determination of heat-induced or process related contaminants and is equipped with several liquid chromatography-tandem mass spectrometers and gas chromatography-mass spectrometry instruments with different sample introduction and ionization techniques. The group is also well equipped with high performance liquid chromatography and gas chromatography instruments with various specific detectors. Furthermore, access to other instruments such as Nuclear Magnetic Resonance and high resolution or isotope mass spectrometers are available on site. The contaminants group is also ISO 17025 accredited as a testing laboratory and is well experienced in project management best practices. The group has also participated in other European projects, most recently in the Ochratoxin A Risk Assessment.

     

    Principal staff involved:
    Dr. C. Servais
    has replaced Dr. F.P. Scanlan in the leadership of the contaminant group of the Quality and Safety department of Nestec SA. He has 10 year experience in research and R&D project management, including EU projects. Former lecturer at the Swiss Federal Institute of Technology, his background is Materials Science, which combines Chemistry, Mechanics, Physics and Food Science. He has many publications and is a member of the American Institute of Physics, of the British Rheology Society and of the Swiss Chemical Society. He fully supports Nestec contribution in this project.

     

    Dipl. Ing A. Studer received his diploma in human nutrition and food management and is responsible for the process contaminant projects in the contaminants group. He has a vast experience of more than 30 years in food technology and has also been active in acrylamide, chloropropanols and furan research activities. He is currently member of the Swiss Chemical Society, Swiss Delegate for the European Association for Chemical and Molecular Sciences (EuCheMS) and is active on the European Food Industry Association CIAA Acrylamide expert group.

    Dr. O. Novotny is a postdoctoral scientist with experience in the field of process contaminants. Since January 2007 he has joined the Nestlé Research Center (Switzerland) as the task manager for the EU Furan study. He has a Ph.D. specializing in Maillard Chemistry and has been involved in acrylamide and chloropropanol's research activities. He has both analytical skills and experience with mechanistic studies and has participated in COST and  HEATOX research projects. He will contribute to the elucidation of formation mechanisms, establishment of kinetics, and proposing mitigation strategies.

     

    Dr. T. Goldmann has a PhD in forensic science and is senior researcher in the Contaminants group. He has developed analytical methods for acrylamide, acrylamide precursors and more recently furan. Using this method he was able to follow the evolution of furan formation and disappearance in several products such as baby foods and coffee.

     

    Dr. G. Scholz is toxicologist and will contribute to the risk assessment of analytical results in food matrices. She has extensive experience in other EU projects and is a member of International Life Science Institute (ILSI) task force on process related compounds and expert group on risk benefit assessment of acrylamide mitigation measures. She participated in the published ILSI report on Human Exposure and Internal Dose Assessments of Acrylamide in Food.

     

    Dr. I. Blank and Dr. R. Stadler are both scientists and managers at Nestlé’s product technology center at Orbe Switzerland. Their research interests are focused on heat-induced and process related chemicals. Both have long track records of international acclaim for their research activities respectively related to Maillard Chemistry and Chemical Contaminants (most notably Acrylamide). They have produced numerous publications and conference presentations on these subjects. R. Stadler is member of the CIAA Acrylamide expert group.
